In biomimetic food, expanded modified starch can provide a strong and uniform tissue structure, giving the product a crisp and elastic taste and improving the slicing ability of the product. In meat products, it can maintain juice, reduce juice production, increase yield, improve freeze-thaw stability, and make the product taste better.

The process flow of puffing modified starch mainly includes the following steps:
Raw material selection and cleaning: Select suitable starch raw materials and clean them to ensure the purity of the raw materials.
Soaking and crushing: Soak and crush the cleaned raw materials into appropriate sizes for subsequent processing.
Puffing treatment: Starch is subjected to high-temperature and high-pressure treatment using puffing equipment to expand and form a porous structure, which facilitates subsequent denaturation reactions.
Denaturation reaction: Adding an appropriate amount of chemical reagents or physical treatment to the expanded starch to change its properties, such as pre gelatinization, acid hydrolysis, oxidation, etc.
Washing and Neutralization: Wash the denatured starch, remove excess chemical reagents, and perform neutralization treatment to ensure the stability of the product.
Drying and Grinding: Dry the washed starch, remove moisture, and then grind it into powder form.
